why is all my data gone if I haven't even had my router on for the past week?

I turned the router off and kept it off so I wasn't on the internet at all.

Once you turned your router back on, most likely your devices did software or app updates once they detected the internet.

Hi Blucci,  Are you referring to your modem? When you turned it off, all the data had not been recorded and appeared when you turned it back on. Out of curiosity, how much data did you have left before you turned it off?
Do you have automatic updates turned on?
Generally, app updates shouldn't be enough to go over the limit unless you were very close to the limit.
