how much interference will I have with 24 cat 5 e cables next to each other

None if they are of decent quality.

My small closet with a bundle of 24, not all are active, but I have had larger deployments with ~400 cables all bundled in hallways over long distances.

Trust me, you wont have any interference from dozens stacked together.  You wont even see interference if it's running along side a short 120v circuit (wouldn't do it anyways) if the cable is of good quality.

There's no harm... However, you will be limited to the individual cables individual specs, though I doubt that would be issue since most don't use more than 1Gbps on LAN...

Cat5 = 100Mbps
Cat5e = 1Gbps
Cat6 = 1Gbps

(Old standards, most equipment)

Cat5 = 100Mbps (1Gbps if short run)
Cat5e = 2.5Gbps (5Gbps if short run)
Cat6 = 5Gbps (10Gbps if short run).

(Those are all specs adhering to the absolute latest standards, most hardware does not support these standards)

Google twisted pair definition and that will explain why , all telephone and cat5 , 5e and 6 are twisted pair cable

Don't run the cables along power cords or florescent lighting and you will be fine.
