Do you have any idea as to the number of ways that data can "leak"?

Are you aware that "off" is not always off?

Do you have a router that tracks data?

As Gwalk points out, you do not have to be actively using a connected device for it to use data. The devices don't have to ask your permission either - unless you change setting to force them to ask and, in some cases that is not possible. 

A sleeping computer can wake to download updates, phones can place updates over a set size on hold until they connect to wifi, then automatically download those large updates. 

Of course streaming uses a lot of data and, beyond that you need to look at your router security and make sure no one else is using your data. Even a friend or relative you let use it once might still be using it.
